How we store our macarons as a macaron bakery
HOW TO STORE YOUR MACARONS (FILLED MACARONS & MACARONS SHELLS)
You’ve either bought macarons or you made macarons and after putting the effort in ordering them or making them, now you have another challenge… to store them.
As a macaron baker here are a few ways you can store your macarons for maximum freshness.
Place in an Airtight Container - using either a macaron tray or a plastic air tight container will keep the macarons from going stale
Place in Fridge/Freezer - Once placed in an airtight container you can place in the fridge or freezer. If you are storing your macarons more than 1 week, place in the freezer and they will stay good for 2-3 weeks. If you are needing to store them up to 1 week, then place only in the fridge.
How to Prepare - Once taken out of the fridge/freezer make sure to not work with them until they have reached room temp. The macarons will ‘sweat’ once they are taken out of the fridge/freezer. This is when the macaron shells are at their most vulnerable, allow up to 1 hr before packaging/displaying/eating macarons.
Here’s what to do if you are storing only the shells:
Same as the filled macarons, keep in an airtight container. If you notice the bottoms are sticky ( which tends to happen with only macaron shells) place in an airtight container and place in a way the bottoms are not touching another bottom. This will give the bottom of the shells air flow to dry out.
I recommend leaving them at room temperature. Reason being, putting Mac shells in freezer/fridge can further soften the shell ( once you remove them from the fridge they will sweat, creating a moisture on the outer shell). If you want to keep your shells durable, keep at room temperature up to 2 weeks.
